ESSENTIAL FUNCTIONS:
• Assist in the preparation/production of assigned menu items according to FDA scheduled procedures and established standards.
• Assures preparation of food items as needed in appropriate quantities for customer needs.
• May assist with preparation and products to include packaging, labeling and distribution.
• Ensures departmental standards are met with regard to product quality and appearance.
• Ensures that area is in compliance with all applicable sanitary codes or standards.
• Reports any equipment problems as necessary.
• Maintains area coolers, freezers, and storage areas in a neat and orderly manner.
• Performs other duties as directed by the production coordinator.
EDUCATION:
• High school diploma or equivalent.
• 2-4 years experience in food related field.
• Good written, verbal and math skills.

ESSENTIAL FUNCTIONS:
•Reviews menu items, production plans, and job assignments necessary to coordinate the production of all menu items.
• Ensures preparation of food items in line with Dining Services standards.
• Assigns and supervises work of subordinate cooks and other production staff.
• Clean and maintain proper storage of products (first in, first out) in storerooms, freezers, and coolers.
• Plans for the timely and proper use of any leftover items.
• Sets up and maintains serving areas according to Dining Service standards in a timely fashion.
• Assures the proper cooling and storage of potentially hazardous food items and practices HACCP procedures.
• Ensures that recipes are followed and when necessary convert correctly.
• Reports any deficiencies or problems with any food, supplies or equipment.
• Maintains production records.
•Helps in maintaining menus in Chef Tech menu/inventory program.
•Performs demonstration cooking as needed.
•Helps train kitchen staff with skills and technique and safety standards.
• Prepares catering or special event food items.
• Suggests or recommends new recipes, preparation methods, and menu items.
• Additional responsibilities as assigned.

EDUCATION:
A minimum of 2 years of experience in kitchen preparation and cooking with culinary arts or restaurant management degree preferred. At least 6 months experience in high volume, fast paced quantity foods kitchen. Must be able to communicate clearly with managers, kitchen and dining room personnel, have serve safe certificate or equivalent.
